Honey Carrots

Scrape 3 lbs. carrots w/ potato peeler, cut off both tips of each carrot, and slice. 
Put into 2 quart pan and add water about 1/3 as deep as carrots.
To season, add 1/4 c. butter, 1 1/2 tsp. salt, 2 Tbs. honey, and black pepper to taste. 
  • Cook over high heat till boiling, then reduce heat and cook till tender, making sure water doesn't all boil out. Cooking should take about 30 minutes.
