Jello Cookies

Jello Cookies
 1 ½ c. butter,   1 c. sugar,   1 pkg. jello*,   1 tsp. vanilla, 
1 egg,   1 tsp. baking powder,   3 or 3 ½ c. all purpose flour

Cream butter and sugar; add egg and vanilla, mixing well.
Add flour, baking powder, and 2/3 of jello; mix well again.
Roll in balls and dip top half of each ball in remaining jello.
Place cookie balls on lightly greased cookie sheet, jello side up; make a slight indention with fingertip on each cookie.
Bake @ 350 for approximately 12 minutes.

* I used Peach jello in these cookies, but strawberry or orange makes them more colorful and pretty.

None of That

Leaves are finally falling here, 
and my daughter wanted a picture
of the "little man" in a pile of leaves...

But he was having none of that.
They're prickly, and crunchy...
Maybe next year :-) 

He was, however, just fine
with all those kisses
that Daddy & Mommy
smothered him with.

Nutrition Needed!

After taking a tumble down the stairs 
way back in early April, 
I guess I have developed arthritis...

Anyway, it's more difficult to move now, 
especially after sitting awhile. 

So I have studied again on this subject
and decided I must get more nutrition 
and less additives, sugar, dairy, meat, etc. 

Yesterday I juiced carrots & celery, 
then bought more carrots & celery, 
plus spinach & apples for today. 

And this morning I had more energy
and could already move easier! 
I'm thankful.

Eclair Cake

Another amazingly easy dessert...and it's quick, and it's yum :-)

You'll need: 2 small pkg. vanilla instant pudding mix,  3 1/2 c. milk, 
8 oz. whipped topping, 1 box graham crackers

I put 2 c. milk in a bowl, and add my pudding mixes. Whisk together till there are no lumps. Then add remaining 1 1/2 c. milk, and whisk again. Add whipped topping and whisk till incorporated. 

Layer graham crackers on bottom of  pyrex casserole dish. Spread 1/3 of pudding mixture. 
Do another layer of grahams, and more pudding. Then 3rd layer of grahams and rest of pudding.
Finally another layer of graham crackers to make a surface for your chocolate topping. 

The original recipe calls for a container of chocolate frosting, microwaved for 30 seconds.
I didn't have that, so I used 12 oz. chocolate chips, melted w/ 1/2 c. of cream.

Pumpkin Muffins

3-1/2 cups all-purpose flour    ~   2 cups sugar

2 tsp. baking soda    ~   2 tsp. salt    ~   1 tsp. baking powder

 4 eggs    ~   2 c. pumpkin puree*   ~   2/3 cup oil 

2 tsp. pumpkin pie spice

Mix all ingredients together and fill muffin tins 3/4 full for each muffin. 
Bake @ 350 till almost firm to touch. (It's good if it's still a tad less than "done".)

*Pumpkin puree:  Slice a pumpkin in half & scoop out seeds. Bake in oven till 
pumpkin feels done when you stick a fork in it...maybe an hour. Let cool, scoop 
pumpkin out of shell and blend in food processor. Freeze remaining pumpkin 
in ziplock bags ready to use another time. This pumpkin is not as concentrated 
as what you buy in the can, and it may be a lighter orange color.

Pizza Bread!

Now this I plan to make 
again and again!

I made the bread dough 

Then just rolled it out
and spread with tomato paste, 
pepperoni & grated cheddar.

Rolled it like a jelly roll
and let it rise overnight.

Baked for about 45 minutes 
or so. Removed from oven 
and let it cool for 30 minutes
before removing from pans.
Then let cool at least another
30 minutes before slicing.

And it is just as good as it looks! 
Oh yummy, yummy, yum!!!

Our church ladies had opportunity to get away to the country overnight... a treat! 
With such nice accommodations, we were hardly "roughing it"...but yet we were 
"out in the middle of nowhere" and the weather couldn't  have been more perfect!
We enjoyed good food, fellowship, lots of games (including a treasure hunt!), 
laughter, and two encouraging messages from our pastor's wife.  So glad I went!
