Papaya Butter


3 cups mashed papaya,     1/2 c. granulated sugar,     1 Tbs. lemon juice

Cook papaya & sugar in non-stick skillet until liquid is dissipated, stirring occasionally. 
Add lemon juice and mix well.  Spoon into jar or container.  
If not using right away, store in refrigerator. 

This has a smooth consistency and is not too sweet.  Just yummy.  Just right.
