A Shepherd's Pie

2 medium carrots, diced

1 pkg. onion soup mix

1 c. water

1 c. frozen petite green peas

1 lb. ground beef

1 Tbs. tapioca starch

1 quart stiff mashed potatoes

1 c. grated cheddar

Cook carrots and onion soup in water for 10 min. 
Add frozen peas and boil another 5 minutes. 
Crumble and brown ground beef in skillet. Drain. Stir in starch. 
Mix vegetable mixture into this and spread in casserole dish. 
Scoop mashed potatoes over top w/ an ice cream scoop. 
(I flattened each scoop slightly w/ back of spoon after meat mixture is covered.) 
Sprinkle cheese over top. Bake @ 350 for 30 minutes.

Scrumptious Squash

With so much squash, I had to find a creative way to entice my husband to help me eat it :-)
This recipe was a winner, plus it's so easy to put together! I'd say this recipe serves 4 as a side dish. 

Scrumptious Squash

1 large squash, cut into large cubes
1 tsp. salt (added to water),  ½ tsp. black pepper
1 sleeve Ritz crackers
½  stick butter
2 c. sour cream
1 c. grated cheddar

Boil squash in salted water (just enough to barely cover) for 15 min. or till tender. Drain.

Mix lightly crushed crackers w/ melted butter, and reserve 1/2 of it for topping.

In remaining cracker mixture, mix your sour cream, cheese, and squash. Spoon into casserole dish and top w/ other half of cracker mixture. Bake @ 325 for 1 hr. 

Optional: Add a small sliced onion to boil with your squash.

No idea how to pronounce the scientific name:

The common name is Salvia "Black & Blue"
and this is the only plant I've ever seen
that actually sports a true black.
The blue is bright and
so attractive!

This is maybe the 3rd year I've enjoyed
it in my garden, but it doesn't seem
to multiply as quickly as I'd like.

I must learn to propagate this plant 
so I can have more and more of it!
Time to experiment...

Meow Update

So the kitten we rescued a few weeks ago was eventually adopted and nurtured 
by our little dog, Snuggles, 
who was just the right size for that role. 

After allowing the orphaned kitten to suckle for a few days, Snuggles got milk (yes, she did!) and was able to nurse and mother the kitten till it started eating 
and drinking out of a bowl this week. 

I researched online and found that this 
is not uncommon. It saved us hours of feeding and it was just really sweet.

Meow Moses is doing quite well
and pouncing and pawing at everything.

Birthday Harmony

It was another birthday. Not fancy, but we had family and laughs and fun. 
And harmony. In spirit and in song. So much so that we sang Happy Birthday twice! 
There was a cake decorated like the Police Box of the Dr. Who science fiction show.
And 3 kinds of pizza. And 2 kinds of wings. 
And 2 babies. And a dog. And a kitten. 
Not one dull moment :-) So blessed!

Just Right

He's just the right age
to be totally impressed
with chalk art. I love it! 

He comes in the house
and makes his way to
the chalkboard, and 
draws. Then erases. 
Then draws some more.

Well, he's just the right 
age to be loads of fun,
to be loving, and funny, 
and filled with wonder 
at all these new things 
he's discovering.

And he's just right!

Now Adopted

Who would have guessed? 
Snuggles had been a bit wary of little Meow Moses till last night when she unexpectedly adopted him! 
She is letting him "nurse"...I don't guess there's any milk, but it satisfies the desire to suckle. 
And she "washes" him, licking him all over with her tongue. 
She's very protective of him...she even barked at me when I walked past! 
She's quite attentive to her newly welcomed baby.

Blooming Where Discarded

Yes, that's right! I tossed these Chrysanthemums out in the flower bed last winter after they looked dead. Just thought they'd compost. But this spring they have bloomed out beautifully. Better than if I'd tried!

Season's First Squash

Thankful for the abundant rain
we've had lately. It sure made 
the squash grow! This is just the
beginning of many more I hope. 

And these little tomatoes are 
just so yummy! I can hardly get
to the house with them because
they're just the right size to pop
in my mouth. LOL

I would have let the squash get
a bit bigger except that the ground    is so wet and I was 
afraid they would rot. 
Maybe we'll get a few
larger ones later.
