Scrumptious Squash

With so much squash, I had to find a creative way to entice my husband to help me eat it :-)
This recipe was a winner, plus it's so easy to put together! I'd say this recipe serves 4 as a side dish. 

Scrumptious Squash


1 large squash, cut into large cubes
1 tsp. salt (added to water),  ½ tsp. black pepper
1 sleeve Ritz crackers
½  stick butter
2 c. sour cream
1 c. grated cheddar

Boil squash in salted water (just enough to barely cover) for 15 min. or till tender. Drain.

Mix lightly crushed crackers w/ melted butter, and reserve 1/2 of it for topping.

In remaining cracker mixture, mix your sour cream, cheese, and squash. Spoon into casserole dish and top w/ other half of cracker mixture. Bake @ 325 for 1 hr. 



Optional: Add a small sliced onion to boil with your squash.
