The Glad Game


As Pollyanna says, "You can always find something to be glad about!" 

My husband had a flat tire while he was driving home from work. But I'm glad he wasn't 
on the interstate in fast and heavy traffic; I'm glad he wasn't hurt; I'm glad we could 
afford a new tire and he had the time to take care of it today.  

And I'm glad we're not dealing with a flood or a raging fire, or a hurricane or earthquake...

One Man's Trash...


"One man's trash is another man's treasure!"  

Well, several years ago we found this Rubber Plant alongside the road in a small pot. 
I planted it in the ground, and it thrived, growing several feet tall the first year. 
Every Winter it gets frost-bitten, and dies back till it's about 1/4 of this size, 
but in Spring it comes back with vigor and it's now about 8 feet tall again.

Common Name: Spider Lily
But there are many varieties of flowers called "Spider Lily", 
so officially it is the Hymenocallis Littoralis. 
(I will never remember that!)

Perfectly Peachy!




I think there's not much better than a 
juicy, ripe and luscious peach.

At the grocery they are often hard, 
but we bring them home and let them
ripen in a paper bag for a few days 
till they are just perfect!

Evening Shower


A breeze that gradually picks up and causes the flowers to sway.
A distant rumble that grows louder and more frequent.
A flicker of lightning. A sprinkle or two of rain.
And then a shower watering the plants.

Cabbage & Potatoes


It's ever so easy and ever so yum! 
I never measure...just toss in what's available, or however much I want, 
or what the pan will hold...but here's the basic idea.

Heat coconut oil (or whatever oil or shortening you prefer) 
in non-stick skillet over medium heat. 

Slice your vegetables (cabbage, carrots, onion, celery, bell pepper) 
and toss into pan, with cubed potatoes last. Then add salt & pepper as you like.

If you put potatoes first, they will stick to your pan unless it's really hot. 
I layer in all the veggies as I chop them, then potatoes last. Put the lid on and 
let them cook over medium heat about 5 minutes, and then toss to prevent any 
scorching. Toss veggies about every five minutes until carrots & potatoes are tender.
