Coco-Goober Pie

1 unbaked 9" pie shell 
1 c. flaked coconut 
12 oz. chocolate chips
1 c. salted peanuts
1 can sweetened condensed milk

Spread the coconut in the pie shell, layer chocolate chips on top, then the peanuts. 
Lastly, pour the sweetened condensed milk over all. Bake @ 350 till crust is done.

Clinging Clematis

Every year, this vine tries to take over my rhododendrons, 
and climb up into the holly tree... and this year it finally succeeded. 
I can't count the times I pulled the vines down earlier this year, 
and every other year...but just give it a few weeks with no attention, 
and now it's gone crazy! I just don't want it to smother out Spring blooms.

It is pretty. I am enjoying it. But as soon as it quits blooming 
I'll be tugging it out and throwing away as much as I can get hold of. 
It's called Sweet Autumn Clematis, and it is quite tenacious!

Y IS For Yellow!

My grandson is growing up...
getting tall, getting so smart, 
learning to spell his colors...
and I am thankful that I was 
able to read him a story today 
even though there are 
many miles between us.

Because he's changing so quickly
and one day he won't care about 
Goldilocks And The Three Bears.
For today he sat spellbound 
and looked at the pages as I 
read, and I got to watch his 
expressions in real time...

brother playing the flute and sister so tired of listening
and begging him to stop already!

All Of A Sudden

The sparrows seem to be waiting in the bush until the Blue Jays 
finish their debate over who has first rights to the sunflower seeds :-)  

We haven't seen many birds here lately, but all of a sudden there were 
5 Blue Jays, more than a dozen Sparrows, a male & female Cardinal... 
and a Squirrel! Now, where are the hummingbirds?!

Corn Tortilla Tostado Thingy

Laughing out loud at the title...but I don't know what to call these :-) 

It was good, and should be relatively healthy, and we will probably do this again! 

I mashed pinto beans with a bit of grated cheese for the base.
Then seared frozen corn, onion, and red pepper in a non-stick skillet.
And topped with finely diced avacadoes.

Good enough, very filling, and healthier than alot of other options. And easy! 
We will likely do this again, though my husband wants to skip the corn, 
and I want to try broiling them in the oven. Similar but different.

Best Okra!!!

You must know!
This is the most tender, luscious okra
I have ever prepared! Best I've ever grown,
and possibly the best I've ever eaten!

It is easy to pick, not prickly like some other
varieties I've had. It grows long and quickly
so you get a better yield. And it stays tender!

Last year whatever kind I grew was such
a disappointment! It was very prickly to
pick, and if it got over 4 inches it was too
tough to eat!

I highly recommend this variety,
and Baker Creek who sells it!
I'm so very pleased!!!
