Corn Tortilla Tostado Thingy


Laughing out loud at the title...but I don't know what to call these :-) 

It was good, and should be relatively healthy, and we will probably do this again! 

I mashed pinto beans with a bit of grated cheese for the base.
Then seared frozen corn, onion, and red pepper in a non-stick skillet.
And topped with finely diced avacadoes.

Good enough, very filling, and healthier than alot of other options. And easy! 
We will likely do this again, though my husband wants to skip the corn, 
and I want to try broiling them in the oven. Similar but different.
